Ingredients

For the broth:

  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1/2 stem lemongrass, grated
  • 1 teaspoon chili flakes (optional, for spice)
  • 1 teaspoon rice vinegar

For the toppings:

  • 1 bunch of udon wheat noodles
  • 2 soft-boiled eggs
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup baby spinach or bok choy
  • 1 carrot, shredded
  • 2 green onions, sliced
  • 1 teaspoon toasted sesame seeds
  • 1 fried beef medallion steak (or substitute chicken, tofu, pork, or shrimp)

For the side:

  • Frozen gyozas

Instructions

  1. Prepare the broth: In a large pot over medium heat, add sesame oil, garlic, and ginger. Sauté for about a minute until fragrant.
  2. Build the flavour: Pour in the broth and water. Stir in the soy sauce, miso paste, rice vinegar, and chili flakes. Bring to a gentle simmer and let cook for 10 minutes to allow the flavours to develop.
  3. Cook the toppings: While the broth simmers, cook the mushrooms in a separate pan until softened. Soft-boil the eggs by placing them in boiling water for 6–7 minutes, then transferring them to an ice bath before peeling.
  4. Gyoza time: Let's keep it simple. I use frozen gyozas and steam them over my simmering broth. Then I fry them for a couple of minutes for the crunchy bite. Serve with your favourite sources.
  5. Cook the noodles: Follow the package instructions, then drain and set aside.
  6. Assemble the bowl: Divide the noodles between two bowls. Ladle the hot broth over the noodles and arrange your chosen toppings beautifully on top.
  7. Garnish and serve: Sprinkle with green onions, sesame seeds, and nori. Slice the soft-boiled eggs in half and place them on top. Serve hot and enjoy!
